Opening a brewery takes a considerable amount of work, including the high safety standards of a production facility, cleanliness of the equipment such as tanks and fermentation vessels, and maintaining safe ingredients through the entire supply chain. A brewery production facility, or brewhouse, should undergo stringent testing to ensure it meets health and safety standards. To make certain the beer is safe to consume, the brewmaster should use the Brewers Association of Canada - Pre-requisite Program - Premises app to audit the facility. The building should have adequate waste disposal, as well as lighting and ventilation to provide a safe work environment. The exterior of the building should be maintained to eliminate the possibility of contaminants, water should undergo periodic testing, and equipment should be regularly cleaned and stored properly. Employees should have access to handwashing stations and distributors and customers should not have direct access to unopened products.
